Greek Salad
Toss together a bag of Spring Mix salad greens, 3 chopped
Tomatoes-on-the-Vine, chopped seedless cucumber, sliced
red onion, chopped sweet red pepper, pitted black olives and
¾ cup cubed feta cheese. Top with dressing and fresh basil.
6 tbsp. olive oil, 1.5 tbsp. fresh lemon juice,
1 tbsp. red wine vinegar, 2 minced garlic cloves,1 tsp.
dried oregano, salt and pepper to taste. (Makes 6 servings)
