TIP FROM THE TRADE
Grilling is healthier and adds
great flavor. Brush with extra
virgin olive oil before you put
them on the grill, and use a
smoked salt or course ground
salt to enhance the flavor. Make
sure you clean your soft shell
crabs before cooking. Use
scissors to cut off their eyes, then
lift up one side of the shell and
cut out the “dead man’s fingers.”
Repeat on the other side. Rinse
and pat dry before cooking.
