Your shelves are always filled with so many choices. You are so clean, and your meats are
always fresh and tasty. Last week I picked up your magazine and in it was the recipe for
Oyster Dressing, which was the recipe from your founder, Anthony Rouse.  I fixed this
Oyster Dressing recipe, and it came out so delicious. We will have this dish tomorrow,
thanks to you. Happy Thanksgiving Rouses and may you enjoy success in the coming years
... you deserve it.

It’s a simple recipe, which is just the way my dad liked things. We make it every year on

I’m just back from Jackson, Mississippi, where I had a wonderful visit with Chef Cat Cora’s
mother Virginia.  (She and I are both close friends with the woman who restored Eudora
Welty’s gardens in Jackson, and this was a small party for that woman’s 60th birthday).
Anyway, Virginia wanted to know all about the Edible Schoolyard in New Orleans, which
our mutual friend had described to her. I did not know Virginia was Cat Cora’s mother but
when I realized it, I told her I’d recently seen a sign in “my” Rouse’s on Tchoupitoulas Street
that Cat Cora was doing a demonstration there. Virginia Cora, unsolicited, had many many
positive things to say about the Rouse family and staff who were at the market uptown that
day.  She was extremely impressed by the quality and character of all the people involved,
and was highly complimentary about what fine folks you all are. I told her that Rouses sup-
ports the Edible Schoolyard in New Orleans, and she said you went up another notch in
her estimation, which was already very high.

FRANK DAVIS
We worked with Frank Davis as far
back as the 80s. His spices and books
have always been customer favorites,
and Frank himself would come do
cooking classes and appearances in
stores from Houma to Slidell. Frank
and I shared fishing tips and cooking
tips, and Rouses sponsored his cooking
programs, Franksgiving and Naturally
Noel, on WWL TV. Frank was
Naturally New Orleans to the core. He
will be missed.

MY ROUSES:
5245 Veterans, Metairie
My restaurant is in the same shopping
center as Rouses, and I’m in and out of
the store all the time. Rouses has been my
pantry, my butcher shop, my seafood market
and my wine cellar. If you see me wandering
the aisles in the afternoon, chances are I’m
planning the next day’s special or drink
of the day. I always find something that
inspires me. I love the remodel. Everything
is bright and shiny and new.
