Savory Herb Rub Roasted Turkey
Prep Time: 20 minutes
Cook Time: 3 1/2 hours
Makes 12 servings

1 tbsp. seasoned salt

1 whole turkey (12 to 14 lbs.), fresh or frozen, thawed
1 large onion, cut into wedges

Bay Leaves
1 tbsp. vegetable oil
PLACE
oven rack in lowest position. Place roasting rack in shallow
roasting pan. Mix first 6 ingredients in small bowl.
RINSE
turkey; pat dry. Place turkey, breast-side up, in prepared pan.
Sprinkle about half of the seasoning mixture inside turkey. Stuff with
onion and bay leaves. Brush turkey breast with oil. Spread remaining
seasoning mixture over entire surface and under skin of turkey. Add
1/2 cup water to pan. Cover turkey loosely with heavy duty foil.
ROAST
in preheated 325°F oven 1 hour. Remove foil. Roast 2 to 2
1/2 hours longer or until internal temperature reaches 165°F (175°F
in thigh), basting occasionally with pan juices. Remove turkey from
oven. Let stand 20 minutes. Transfer to platter or carving board and
slice. Reserve pan juices to make gravy or to serve with turkey.

Makes 8 servings
1 frozen unbaked deep dish pie crust (9-inch)
1 can (15 oz.) pumpkin
1 can (14 oz.) sweetened condensed milk

Pumpkin Pie Spice
PLACE
pie crust on large foil-lined baking sheet. Mix pumpkin, milk,
eggs, and pumpkin pie spice in large bowl until smooth. Pour into crust.
BAKE
in preheated 425°F oven 15 minutes. Reduce oven temperature
to 350°F.
BAKE
40 minutes longer or until knife inserted 1 inch from crust
comes out clean. Cool completely on wire rack. Serve with Vanilla
Whipped Cream (recipe follows).
Vanilla Whipped Cream:
Beat 1 cup heavy cream, 1/4 cup
confectioners’ sugar and 1 tsp.
