Ending the Microwave Era

On Wednesday nights, I cook dinner for my family. A year and a half ago, my Mom passed away due to
cancer. After watching my step-dad eat yet another microwave dinner, my friend Rebecca and I decided to
cook a delicious homemade meal once a week. My Mom was the one who used to teach me how to cook,
so I was grateful for this new opportunity to learn from Rebecca.
This week, we made Rebecca’s Thai Curry Noodles. We bought the ingredients—fresh shrimp, red bell
peppers, onions, bean sprouts, chives, soy sauce, and of course, curry—from our neighborhood Rouses.
Every time someone tasted a noodle and exclaimed, “Needs more curry!” my step-brother would scream,
“What do you want?” His name happens to be Curry. This cracked us up.
Gathering around the table, we dug into the noodles, which were perfect with a little Tabasco on top and
steamed edamame on the side. Ironically, Curry is not the biggest fan of his namesake, but he loved the
shrimp. For dessert, we made one of my Mom’s favorites, sticky coconut rice with mango. As delicious as
the meal was, my favorite part was attempting to answer my 5-year-old sister’s endless questions about the
origin of the bean sprout.
